In addition to being the editor-in-chief of the Los Angeles Jewish Journal, Rob Eshman is also "Editor-in-Chef" at Foodaism, the Jewish Journal's food blog. I don't know where he finds the time.
In this humorous joint, the foodie/editor takes you through the preparation steps for the "Double Down Latke Sandwich."
It never would have occurred to me to drain the latke mixture that way - will have to give it a try next week.

Thanks so much for posting these links! I was sort of on the fence about making my own latkes this year because I was eating plenty of them at various parties, but this inspired me to make my own batch last night, and I used some of their suggestions, which were very helpful.
